Beets have been a part of human diet for a long time in history. This amazing vegitable root has a lot of nutritional values. I have harvested yellow and red beets, but in regards to color and shape, I am sure there are other kinds of beets in the world. Both leaves and roots are edible. The leaves can be used in salad and different stews like pomigranate stew (Ashe Anar) and the roots can be roasted, steamed, boiled, or pickled. Beets are full of fiber and they are famous for their anti cancer qualities. Except than using them raw, the best way to keep the neutritions and the taste is to wash the roots and wrap them individually in a piece of foil with a table spoon water and steam it in the oven. Roasting beets with olive oil makes it a wonderful side dish or an addition to you salad. You can make pickles with small whole beets, slices, or grated mix with other vegitables. There is a coctail that you can make and drink daily to prevent the growth of cancer cells and fighting cancer, which is a mixture of raw beets, carrots, celery, and broccoli. When you drink raw beets’ juice, you have more courage to do exercise and your cells detoxify faster. Beets are known for reducing blood pressure and relaxing blood vessels, while preventing blood cloth formation. Beets are rich in vitamine C, Folate, and copper. Therefore people who have conditions with extra iron or copper in their body should be careful with over consuming this root.
