Organic Asparagus

When I was an intern at Rodale Institute, I learned that asparagus was a perenial vegatable from lilies family. That was a wonderful news, because I could plant it once and harvest it for twenty years. Ofcourse the first couple of years you don’t pick the shoots, but after that you have a bounty of fresh delicious spring vegetable, which is a super food rich in nutrition. It has vitamines A, B, C, E, and K and lots of fiber and minerals like iron, potacium, calcium, magnesium, zinc, and manganes. It has anti-inflammatory, antioxidant, and anti-depressive qualities and helps the health of brain and eyes. It is diuretic and helps  preventing urinary infection. Also the root of this plant is used to cure epilepsy.

You can steam, bake, sate, or grill it. Use it in your sandwiches, salads, and soups. Asparagus is a wonderful breakfast with egg and toast. 🙂
