Eggplant is called the king of nightshade vegetables (tomato, pepper, potato, and others). In consuming nightshades, people are divided into two groups. One group get lots of benefits from these veggies and another group get hurt by them. How? Because the second group have allergy to them and if they have any pain in their joints and bones, the whole situation say with their arthritis gets worse and by eliminating nightshades from their food, their pain gets much better. The first group react opposit. Given the fact that the most popular snack in America is french fries and catchup (potatoe and tomatoe, two night shades), it is good to know which group we belong to.

Egg plants are consumed around the world, but they are not so popular in America as they are in Euroup, middle East, and far East, specially in India. They have lots of fiber, vitamines, specially vitamine B1, B6, C, and K, potassium, manganese, copper, iron, calcium, folate and no fat or cholesterol. So, it helps weight loss, digestion, Immunity, and even reduces fetus defect, Anemia, dementia and osteoporosis. So if you have depression, weakness, migraine headaches related to Anemia, may be adding eggplant to your diet can help.

It is good to be roasted instead of being fried if you want to loose weight. However, if you want to fry them, the best way is to skin them, rub them with salt, leave them to sweat, and wash & dry them to take the bitterness off. Then rub them with egg white and then fry them. This way they don’t absorb so much oil. There are many different kind of egg plants. In America mostly they are big and chuncky and the long and thin ones are called Japanese eggplants. You find eggplants in many Persian cuisines, in ordoeuvre, pickles, and main dishes. In Itally you find them even on their Pizza and in Israel and Netherland you can have them in your special salad.
