Edamame

I enjoyed watching farmers when they harvested edamame in Thailand (you see the pictures). Edamame or green soybeans is known as a healthy snack. They usually boil them and eat the beans inside the pods after dipping the pod in some soy sauce. Many Asian restaurants serve it as a starter. You can use it in pasta, salad,  soup, and even in main dish.

Edamame has lots of fiber, protein, iron, Vitamins, specially Vit. C as well as Vit. A, calcium, and antioxidant.  Edamame is a good snack for diabetic people and for men with high cholesterol. It is beleived that edamame is good for preventing bone loss and osteoporosis, cancer (specially breast and prostate cancer), heart disease, hypertension, migraine headaches, age related mental disorders, and depression. It is also known that edamame decreases the risk of obesity and increases your energy level.

I like this low maintenance finger food when it is this time of the year and you can buy it in the market. Try it, you will like it too! 🙂
